- 1x 400g tin tomatoes
- 2 tbsp tomato puree
- 1 Bay leaf
- 125g natural peanut butter
- 500ml vegetable stock
- 1 green pepper, seeded and diced in 1 inch pieces

- Place a deep frying pan or stovetop casserole dish over a medium to high heat. Add 1 tbsp olive oil followed by the diced onion. Cook for a few minutes until the onion starts to soften. Add in the beef and brown on all sides for 5-8 minutes. Add in the garlic and chili and cook for a further 2 minutes.
- Add the tomato puree and stir together. Add the tinned tomatoes, stock, bay leaf, pepper, and peanut butter. Stir well to combine. Bring to a boil, then reduce to a low heat or slow cook setting and leave to simmer for up to 5-6 hours with the lid off.
- Sprinkle with chopped corriander and serve with rice or cauliflower rice for a low-carb version.
